The groups in this Department work within the line of research termed “Metabolism of Plant Lipids”, which encompasses characterisation of the synthesis pathways of fatty acids, lipids and other components that determine the organoleptic and nutritional quality of foods of plant origin, evaluation of the modifications that occur during processing and conservation, and development of technologies to improve food quality.
